Maple Cinnamon Mini Pancakes

Ingredients
1 cup all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup 2% milk
2 tablespoons canola oil
1 tablespoon maple syrup

Batter
start by mixing the egg and milk in a bowl. In another bowl mix baking powder , salt, and flour. Then combine the wet and dry ingredients

you should still have the oil and maple syrup . pour all of the oil into the mixture and briefly mix. Next gradually pour in the maple syrup as you finish stirring the batter. The batter should be a light brown in color and the consistency should be smooth but thick
Cooking
It's time to start cooking. grease a frying pan and put it on medium heat. I recommend using butter because it adds to the flavor. Its also gives your pancakes a some what crunchy outside (not hard) with a soft inside

use a table spoon to scoop out your batter and place it on your pan. cooking time ranges between 2 and 4 minutes. flip the little guys when the sides turn golden brown and the top begins to bubble

The pancakes are great alone but if you would like you could add even more syrup. Enjoy!
