Mango Soup
Yeah, I know what your thinking. "Mango soup? That sounds disgusting. What's in it... chicken and mango?" Well, I would've thought the same thing if I were you. But who says you have to give up cold soup just because of the season? Try this chilled soup made from fresh mango, strawberries, and basil. It takes minutes to mix up in your blender and lends itself well to breakfasts, appetizers, desserts, or snacks. This recipe makes about six servings.
Supplies
You will need the following for this project... I already did this and added links but it didn't save so I'm a bit mad, but we will get past that. And I don't think you will need links from Instacart anyway, so, yeah, you might actually have to go out and buy some of this stuff? Tell me if I'm forgetting anything in the comments below :P
- Blender
- Frozen Mango
- Frozen Strawberries
- Milk
- Sugar/honey
- Herb of choice, preferably mint or basil
Build Your Blend
So first, let me say that this is just about the easiest thing to make. Easy but delicious. So I really hope you enjoy making this as often as you like (as I said, it's easy, so you really won't have problems with this.). But now, let's get blending! I grabbed some basil from my garden, although it's almost dead, I found some somewhat green leaves. This will give your "soup" a fresh kick, unlike just the strawberry and mango does by themselves. Throw about 4-5 leaves depending on how you want it to taste in your blending cup. I used 4 and it tasted astonishing, although I feel like that's too big of a word for how easy this is. You can also substitute basil for mint, thyme, or just about any herb you would like.

Now, you add your fruit. I used frozen fruit instead of fresh so I don't have to use ice. I personally think that the ice ruins this, and yes I did try it. It was just... too watered out, I guess. So this way the frozen fruit acts as the ice and it doesn't water everything out because it can't really melt, if that makes sense? Anyway, you need one cup of frozen mango. Once you got that, plop it into the blender with the basil.
Keep Going...
So same thing with the strawberries. I, again, used frozen strawberries. Do the same and throw those in with the rest of your mix. Then, add a teaspoon of sugar/honey.
Milkkk
Yeah, so now you're already almost done. All you need to do is grab your milk and pour 1 1/2 cups of milk into your blender. You want your milk to almost cover all your fruit. I didn't realize that my strawberries float, so I added a bit too much. But that's okay! The soupier the better, maybe? I'm not sure. Anyway, blend your soup and move on to the next step!
Decorate
Now, you can get creative! I thawed out a strawberry and diced it up. I spit three strawberries between six bowls and added two basil leaves for garnish, but you do you! I was thinking kiwi, but I didn't have any on me when I made this. If you wanna hear something funny, I made this for an appetizer. The main course? Mac and cheese. Yeah, that was my meal a few nights ago.
