Mango Salad Salsa

This deliciously colorful salad goes good with just about anything chicken, fish, fish tacos or simply by itself! It's both savory and fresh with a kick of spice and we can't forget it's simple to make...

Chop Everything

Mangos

Cilantro

Avocados

Serrano Chilies (any chili pepper will do)

Onions (preferable red to add color)

Tomatoes

Lime juice

Optional: leftover chicken also finely chopped makes a great appetizer/meal salad. Trust me it's to die for! :),,,

Balsamic Vinaigrette Dressing

I've used both bought and homemade dressing and honestly they both taste great. Sure store bought may need some tweaking but it's simple and it's always best to taste (Adding some sugar/garlic powder/salt/pepper,ect.).

If you choose to make your own here's a simple mix:

1/4 cup balsamic vinegar

2 teaspoons dark brown sugar

1 tablespoon chopped garlic

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

3/4 cup olive oil

Stir all ingredients until completely dissolved

Toss Those Things Together!

This recipe is very forgiving so if you feel like it's missing more of a kick add more chili peppers, if it's not sweet enough add more sugar, I like it a little more sourness so I like to add some lime juice ect. ect. Overall it's going to taste good! Add this on top of fish or chicken, add it to tacos as a salsa, or add some leftover chicken breast and eat it as a salad!
