Mango Kulfi Ice Cream Without a Popsicle Mold

Kulfi is an Indian version of icecream but much creamier and dense than the regular ice cream . Mango kulfi is frozen milk based Indian dessert. It is the perfect time to post the Mango Kulfi as it is the mango season here in India. That is the reason why I chose the mangoes. The fruit market is filled with all varieties of mango and it is a lovely sight to see. The Kulfi Ice cream brings relief from the summer heat.

I have presented here the technique to make kulfi Ice cream without a kulfi shaped Popsicle mold. This technique can be adapted even for any Ice cream recipe.

Ingredients

Serves - 6

Prepapration Time - 15 minutes

Cooking Time - 5 minutes


Ingredients:

2½ - cups milk

¼ cup - Powdered Milk

½ cup - condensed milk

¼ cup - sugar

1 cup - mango pulp

1 Tsp - Cardamom Powder (optional)

Slice the mango to small cubes.

Transfer the mango cubes into the blender.

Blend the mangoes till they form smooth textured puree with no lumps.

Boil the milk.

Then add powdered milk, condensed milk and sugar and mix well.

Bring this mixture to a boil. Then, Simmer for 3-4 minutes till it thickens.

This is because once the sugar has dissolved the milk becomes watery. We need to thicken it.

Let it cool down to the room temperature.

Add the mango pulp. Mix well so that the mango pulp combines well.

Now the ice cream base will be of a thick and creamy texture.

Freeze - First Step

If you don’t have any popsicle mold, do not worry. There is an alternative for everything. :)

You can set these in any container you want.

Traditionally Kulfi icecream are shaped conical almost :) The molds are available in the Indian market.

But here I will show how to get the similar shaped Kulfi.

Take a glass of the size you want. I took a smaller one. It was shaped conical just as I wanted.

Pour the ice cream into the individual kulfi molds.

Freeze it for 2 hours or so.

Popsicle Stick

When almost set insert the popsicle stick at the middle.

Make sure it stands erect.

Then freeze again for 2-3 hours till the ice cream is set.

Unmold

To unmold it, you can easily do that by placing it under running water for few seconds.

Pull the stick gently rotating little by little. It will come out.

Serve

Serve it with mango slices. Enjoy the kulfi ice cream made without a Popsicle mold. Hope this Instructables was helpful. Have fun.
