Manchego Cheese Croquettes
If you ran out of ideas to prepare a new recipe for dinner this one is super versatile and delicious!
What I love of this recipe is that you can fill the croquettes with cheese or any other ingredient you like, such as tuna.
Be creative and enjoy the crispy and delicious taste of these croquettes!
Gather Your Ingredients
- 8 medium potatoes
- 300gr Manchego cheese (or Monterrey Jack)
- 2 eggs
- 250gr Bread crumbs (1 small package)
- Canola oil
Cook Potatoes
Cook potatoes in a pressure cooker for 15-20 minutes (after pressure starts).
Peel the Potatoes
With the hot potatoes (use a kitchen cloth) peel the potatoes
Mash the Potatoes, Add One Egg
It is easier to mash the potatoes if they are still hot. Once all potatoes are mashed, add one egg.
Add Bread Crumbs
Add one spoon bread crumbs and mix.
Wait 30 Minutes
Before making the croquettes the mixture needs to chill, this will take around 30 minutes
Shape the Croquettes, Add Cheese
Use your hands to shape the croquettes. Add cheese inside the mixture
Dip Croquettes Into Egg and Bread Crumbs
Beat an egg. Dip your croquettes in the egg. Roll over the croquettes in bread crumbs.
Fry Croquettes
Fry croquettes in hot oil. When one side is brown, turn the croquettes into the other side. Use napkins to absorb the extra oil after frying.
Serve and Enjoy
Serve croquettes with a fresh salad and lime. Enjoy!
