Make a Pizzadilla! Super Easy Meal
A pizzadilla is a rediculously easy to make meal, perfect for new cooks, kids, and college students.
Basically, we are going to make a quesadilla in a cast iron skillet, put our favorite toppings on top, and broil it to make the cheese all melty.
Gather Your Ingredients
The most basic version of the pizzadilla consists of the following ingredients:
- Flour tortillas that fit snuggly in your cast iron skillet
- A small amount of vegetable or olive oil
- Cheese (i'm using an Italian cheese blend)
- Pizza sauce (from a jar is totally fine)
- Pepperonis
You will also need a cast iron skillet, range, and oven with broiler.
There are infinite ways to gussy up the recipe, such as:
- Adding chicken to the quesadilla portion
- two different cheeses (one for the quesadilla and one for the pizza part)
- add tons more meat to the top
- I am a fan of red onions on my pizza
Prep the Oven and the Skillet
Place a rack in your oven about 5-6 inches from the broiler, preheat the broiler, and put your cast iron skillet over medium heat.
Place about a teaspoon of vegetable or olive oil in the skillet and use a brush to coat the bottom of the skillet.
Don't make the mistake that I made of overheating your cast iron cookware. It conducts heat very, very well. Anything above medium heat will probably lead to burned tortillas.
Make the Quesadilla
Before you get carried away making your delicious meal, make sure all of your toppings are prepped.
Now place a tortilla into the skillet. Add a nice layer of cheese on top of that, making sure not to get any cheese between the tortilla and the skillet (it will burn!)
Top the cheese with the second tortilla.
Check to see if the bottom tortilla is nicely browned after a minute or two, and use a large spatula to flip it over.
Pizza Time
At this point you can kill the heat on the stove.
Now quickly top the tortilla with a layer of pizza sauce, cheese, pepperoni, and whatever toppings your heart desires.
Immediately, plop your skillet in the oven under the broiler using a protective glove of some sort.
Enjoy!
It will take anywhere from 45 seconds to 2 minutes for the top of your pizza to become hot and bubbly.
Make sure you check on it frequently! I have accidentally burned the pizzadilla in this step several times! I suggest checking in after 30 seconds to see if it is done or not.
