Madeleines
Madeleines are shell shaped small sponge cakes from the Lorraine region of France. This recipe makes 15 lemon Madeleine cookies.

Ingredients:
Flour - 60 grams
Baking powder - ½ teaspoon
Sugar - 60 grams
Vanilla sugar - 1 teaspoon
Butter - 60 grams
Egg - 1
Lemon zest - 1 teaspoon
Salt - a pinch
Make the Batter
Place 60 grams of butter in a mixing bowl. Add 60 grams of sugar, a pinch of salt, 1 teaspoon and 1 teaspoon of vanilla sugar. Beat until creamy and smooth.
Add 1 egg in two batches, scraping down the sides of the bowl once or twice.
Add Flour
Sift 60 grams (2 oz) of flour and ½ teaspoon of baking powder into the mixture. Fold until incorporated.
Pipe
Fill a pastry bag with the batter and pipe into a lightly greased madeleine pan, filling the mold ¾ full.
Bake
