Macadamia Nut Ice Cream Pie
We recently took a trip to Hawaii and had one of the best desserts of our lives. It was an ice cream pie with macadamia nuts and caramel. We've been thinking about that pie and decided to create our own!
Supplies
Pie pan
Food processor
Mixing bowl, mixing spoon, measuring spoons and cups
20 whole Oreo-like cookies crushed with food processor to a fine crumble
4 tbsp unsalted butter, melted
1/4 cup creamy peanut butter
2 cups vanilla ice cream, slightly melted
1 cup of macadamia nut halves
Caramel sauce
Chocolate sauce
Crush Cookies
Add 20 whole Oreo-like cookies to a food processor and pulse until they are a fine crumb.
Combine Crust Ingredients and Press Into Pie Pan
Add melted butter, peanut butter, and cookie crumbs into mixing bowl. Mix until well combined. Pour into pie pan and press to make an even layer. Sprinkle half the macadamia nuts over the layer. Drizzle caramel and chocolate sauce over the nuts and cookie crust.
Add the Ice Cream Layer
If your ice cream isn't melted enough, microwave for about 20 seconds or leave out a little longer to melt.
Pour melted ice cream over cookie and nut crust. Spread evenly over crust.
Sprinkle remaining half of macadamia nuts over the top of the ice cream. Drizzle with caramel and chocolate sauce.
Freeze the Pie!
Cover with plastic wrap and freeze for at least 2 hours.
Serve when ice cream is hard again.
