"Mac N Cheese" Butternut Quinoa (4 Ingredients)
Who doesn’t love Mac N Cheese?! Simple to make, delicious, high in protein and you get your vegetables too!
Ingredients:
- 1 1/2 cup butternut squash (frozen&chopped from Costco)
- 1/4 cup milk
- 4 cups cooked quinoa
- 1 cup shredded cheese (the stronger the cheese the better)
Optional toppings:
- Sriracha
- Feta cheese crumbles
- More shredded cheese
- Paprika
Instructions:
- Boil butternut squash in about an inch of water for 10-15 minutes until tender.
- Drain.
- Add milk and cheese.
- Stir.
- Add quinoa.
- Stir.
- Enjoy.
