MEDITTERANEAN BREAKFAST NEST

This superb tasting BREAKFAST NEST is one of my family favorite.
The robust flavor comes from ZA’ATAR, a middle-eastern seasoning combo. It includes many spices as described in STEP 3.
This blend of spices can also be used for:
1. sprinkling on fresh avocado, tomato, or cucumbers for a healthy snack.
2. breakfast - add a depth of flavor into scrambled eggs, or sprinkling it top of fried eggs.
3. Dips - combine with olive oil, hummus, baba ganoush, or plain yogurt with za'atar and scoop it up with pita bread veggies or pita chips
4. Salads get great flavor when topped with a dressing that includes za'atar.
5. Za’atar adds amazing flavor to marinades and dry rubs. Use it to season 🥩meat, 🐠fish, 🐓chicken or 🐑lamb. Also great on 🍔Burgers.
6. avocado toast! - A sprinkling of za'atar on top of avocado toast, with a drizzle of lemon juice and olive oil, will make it jump at you.

Supplies

INGREDIENTS:
1 Bag - RHODES ‘Bake n’ Serve’ Artisan
French rolls. (Use your favorite
brand or bake your own.).
6 each - French rolls (from the bag of 12)
3 each - Large Eggs
2-3 oz - Milk (2%)
1 Tsp. - Cream Cheese (Soft)
6 oz. - Feta or Goat Cheese (Chunk)
1-2 pinch-Salt and Pepper to taste
1 TBSP - Margarine (for frying eggs)
1 TBSP - Butter for brushing top of rolls
1 Jar - Za’atar Seasoning:
Middle Eastern Seasoning
USE STEP 3 - ZA’ATAR - Blend Your
Own Seasoning

UTENSILS:
Bowl
Fork and Spoon
Knives - various
“Tamagoyaki” Japanese egg pan
Square pan Spatula (silicone)
Basting (Butter) Brush (silicone)
Stove top and Oven
Oven Pan
Measuring Spoons
Stick Emerson Blender

NOTE: utensils can be substituted of
your choice.



PREPARING THE NEST

1. Remove the French Rolls from the
freezer.
2. Preheat oven to 350 degrees F (follow
instructions on rolls package.
OPTION: You can also use the
microwave oven)
3. Place French rolls in preheated oven
for 8 minutes.
4. NOTE: You can start preparing the
filling for the Nest ( French Roll)
5. Once the French rolls are ready,
remove the tray out of the oven and
set aside.
LEAVE OVEN ON!
6. Go to step 2.

1. In a mixing bowl combine:
3 eggs, milk, cream cheese,
Feta or Goat cheese, pinch of Za’atar
salt and pepper to taste.
2. Use a stick Emerson blender (or large
fork or wisk) to mix and slightly whip
ingredients.
3. In a Tamagoyaki Japanese omelet
pan (rectangular) put a pad of
margarine, heat the pan, and pour
mixture into pan.
4. DECISION TIME: Either scramble or
omelet style - flat.
5. I chose to make an omelet and
divided it into six pieces.

ZA’ATAR - Blend Your Own Seasoning

This basic blend makes a half-cup of seasoning and provides a solid base recipe. For the best flavor, use whole cumin, coriander, and sesame seeds. Toast them in a dry skillet until fragrant, and then grind them.

1 tablespoon dried thyme, crushed
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon sesame seeds, toasted
1 tablespoon sumac
1/2 teaspoon kosher salt
1/4 teaspoon chili flakes

I like to add marjoram and oregano for additional flavor.

1. By now the French rolls are baked.
2. Remove rolls out of the oven.
DO NOT OVER BAKE
3. Take each roll remove the top and
press the dough with your fingers on
the inside of the roll to create a nest.
4. Save the top of the roll.
TIME TO FILL THE NEST:
5. Divide the egg filling into 6 portions.
6. Place the egg filling into each nest.
7. Cover the egg with a 1/4” thick layer
of Feta or Goat Cheese. (on top of the
nest.)
8. On top of the cheese, sprinkle a fair
amount of Za’atar.
9. Place the tops that were cut off back
on the rolls.
10. Place the butter into a ramican and
Insert into a microwave for 6 seconds.
DO NOT overheat the butter.
11. Place French rolls on oven pan and
brush melted butter on the rolls.
12. Place the prepared French rolls into
the 350 degree F oven for 4-5
minutes. Watch that the rolls do not
burn.
13. Remove from oven
“SERVE WARM”
14. Enjoy your new found Breakfast
treat.
