Luscious Cinnamon Rolls With Cream Cheese Icing
These homemade cinnamon rolls are absolutely fabulous! They are large, soft, full of cinnamon, and topped off with a thick, cream cheese frosting. Easily made with the help of the bread machine, or by hand, you'll be so glad that you tried them!
Supplies
Dough
- 3-1/4 teaspoons yeast
- 4-1/2 cups flour
- 3 Tablespoons sugar
- 2-1/4 teaspoons salt
- 3 large eggs
- 3 Tablespoons butter, softened
- 1-1/8 cups water
Filling
- Butter, 4-6 Tablespoons
- Cinnamon, 1-2 Tablespoons
- Brown Sugar, 3/4 cup or more
Icing
- 6 Tablespoons butter
- 1-1/2 cups powdered sugar
- 8 ounce package cream cheese, softened
- 1/2 teaspoon vanilla
- 1/8 teaspoon salt

Making the Dough
Put all of the Dough ingredients into a bread machine pan, in the order suggested by the manufacturer. Select the Dough setting, and press Start. Alternatively, you could mix the dough by hand, knead, allow to raise until doubled, and proceed with the following step.
Rolling the Dough
When the cycle is complete, flour the countertop or a pastry mat. Place the dough on the mat, and sprinkle flour over it. Knead it into a nice ball. Using a rolling pin, roll the dough into a rectangle 1/4-inch thick.
Filling, Rolling, and Slicing
Filling
Liberally butter the dough with a knife or spatula; butter the entire surface except for the edges.
Liberally sprinkle with brown sugar, and sprinkle cinnamon all over.
Rolling
Beginning with a long edge, tightly roll the dough into a long log, crimping the last edge to seal.
Slicing
Slide a small cutting board underneath one end of the log. Using a sharp knife, slice the log into 1-1/2-inch slices. Place each roll, cut side up, into a greased 15"x10" glass baking pan.
Final Rising and Baking
Cover the pan with a clean cloth, and place the pan into a warm place to raise 45 minutes to one hour.
Preheat the oven to 350 degrees, and bake the rolls for 15-20 minutes, until lightly browned.
Remove from the oven, and allow to cool completely.
Cream Cheese Icing
For the icing, using an electric mixer, cream the cream cheese and butter. Gradually beat in powdered sugar. When the powdered sugar is mixed in well, mix in the vanilla and salt.
Ice the cinnamon rolls.
