Low-fat Chocolate Chip Muffins Recipe:
2 cups all-purpose flour
½ cup sugar substitute (I used stevia)
3 tsps. baking powder
½ tsp. salt
1 tsp. vanilla extract
1 cup almond milk
1/3 cup apple sauce
2 egg whites
¼ cup brown sugar
1 cup semi-sweet chocolate chips (I used mini)
Recipe Directions: Preheat oven to 400 degrees; in a large bowl add egg white, apple sauce, sugar substitute, vanilla and brown sugar. Stir until the ingredients are combined and slowly stir in milk. Mix the dry ingredients in a small bowl and add to the mixture. Mix until dry ingredients are blended in well. Let sit for 1-2 minutes and fold in chocolate chips. Place cupcake liners in a muffin tin and add 1-2 heaping tablespoons of batter to each liner. Bake in the oven for 20-25 minutes or until a tooth pick inserted in the middle of the muffin comes out clean.
