Low Carb and Sugar Free Shortbread Cookies (Keto Friendly/Gluten Free)

In this instructable we will show you how to make Keto Shortbread Cookies. This recipe for keto short bread cookies is very easy to make using very few ingredients, and is a perfect treat for someone that is looking for a low carb sugar free treat. I am in my brother Jared's kitchen again. He has been on the keto diet for almost 7 months now, and he is loving the changes he has seen. He asked me to help him make some cooking videos that were all keto friendly. If we can make these, you can make them! Let's get started!

Ingredients/Tools

Ingredients:

  • 1 ½ cup almond flour (144g)
  • ½ cup coconut flour (64g)
  • 1/3 cup Erythritol or Xylitol Sweeteners (76g)
  • 1 pinch Salt (1g)
  • 1 teaspoon vanilla extract (5 mL)
  • 3/4 cup Unsalted Butter softened (170g)
  • 1 large Egg (optional, traditional shortbread cookies don't have eggs in them)

Tools:

  • Large Bowl
  • Wooden Spoon or fork
  • whisk
  • cookie sheet
  • parchment paper or silicone baking mat

Mix Dry Ingredients

First let's preheat our oven to 300 degrees F. (148 C) Now let's mix together our try ingredients. In a large bowl add the almond flour, coconut flour, Erythritol or Xylitol Sweeteners, and salt. Using a whisk mix those ingredients together until well combined.

Vanilla Extract and Butter

Now add in the vanilla and softened butter. Next use a fork, wooden spoon, or hard spatula and mix those together until the butter coats all the dry ingredients.

Egg (optional)

Now at this point we are going to add in our egg. Traditional shortbread cookies do not have eggs in them. But we added on in this time. It is totally optional. Mix in the egg until the mixture is all combined, leaving a nice dough.

Form, Place, Bake

Now using your hands grab some dough and roll it up into a ball then place on a parchment paper lined or silicone mat lined cookie sheet. Push them down a little bit to flatten them out. This recipe makes around 16 total medium sized short bread cookies. Make sure you have enough room around each cookie. Next bake them for 18 to 25 minutes until the edges are golden brown. Now it is important to let them sit and cool down completely otherwise they may be a bit crumbly. As they cool they will firm up. There you have it, a nice low carb, sugar free, and gluten free shortbread cookie. Enjoy!
