Recipe
Ok here’s the recipe!
Cake:
1/4 cup coconut flour
3-4 tbsp peanut flour (you can use regular peanut butter also)
1/2 tsp baking powder
2 tbsp butter or coconut oil (room temp)
1 egg
2-3 tbsp milk (I use flax milk but you can use whatever)
1/4-1/2 tsp stevia
Frosting:
4 tbsp butter
3 tbsp swerve (it’s an artificial sweetener)
1 tbsp cocoa powder
1tbsp cream
•Mix the 2 flours and baking powder. Add in the egg and the butter, mix well. Stir in the milk and stevia. Pre heat oven to 350 degrees and grease a mini cake pan. Scoop the batter into the cake pan (the batter should be a bit thick) and bake for 15-20 minutes. Check with a tooth pic or a knife. If it comes out clean it’s done. Cut it in half (this helps it cool faster) and cool for 10-15 minutes. For frosting: mix up the butter and the swerve. Add in the cocoa and cream.
