Lobster Roll

simple lobster roll (serves 2)

3 lobster tails

1 celery stalk, diced

1/2 a small shallot, finely chopped

1 tablespoon mayonnaise

1 heaping teaspoon of creme fraiche

1/2 teaspoon dijon mustard

1 teaspoon fresh flat leaf parsley, chopped

1/2 teaspoon chive, minced

pinch of tarragon

squeeze of lemon juice

2 hotdog buns (try and find the kind with a slit on the top)

salt and cracked pepper to taste

1 tablespoon butter

3 small wooden skewers

Other yummy "optional" additions: capers, cornichons, lettuce such as butter or boston bibb

On high heat, heat up a few inches of water and place a steamer basket inside the pot.

stick a skewer through the lobster tails. This prevents it from curling up when steaming.

steam lobster tails for about 7-8 minutes then remove and let them cool.

Take out lobster tail meat. There are several ways to do this . Cut the lobster tail meat into nice big bite size pieces and place in a bowl.

Add all other ingredients and mix together.

Lightly toast the hotdog buns on both sides in butter. Don't get skimpy. Fill each bun with lobster salad mixture and enjoy!
