Loaded Potato Casserole With Bacon, Sausages and Kielbasa.

This is one of those recipes I remember from my childhood. My mom used to prepare it pretty often and I'm doing the same now, as an adult. It's very simple to make, everyone in my family likes it so it's a no brainer... whenever we need something that cooks quickly and I don't feel like making any culinary experiments, I make this potato casserole :)

It's also a very versatile recipe, you can modify it to your likings and the result would still be great. And the best part, it's really hard to mess up, which makes it a perfect recipe for anyone who just starts with cooking.

Potato Casserole Recipe | Loaded with Bacon, Sausages, Kielbasa and Lot's of Cheese

This recipe is so simple that I'm pretty sure you can replicate it just by watching this short video. So check it out.

Ingredients Needed.

These are the ingredients I've used. As I mentioned at the beginning, it's absolutely possible to modify this recipe! Don't like some of them, just skip it. Want less of those meaty ingredients? Fine, swap them for veggies. Your imagination is the only limit.

2-2.5kg (4-4.5 lb) potatoes of choice
150g (5oz) bacon
150g (5oz) sausages
150g (5oz) kielbasa
5-6 eggs
2 balls fresh mozzarella
150g (5oz) shredded mozzarella
350lm (1.5 cup) heavy whipping cream
3-4 tbsp grated Parmigiano
1 tsp red paprika
salt & pepper to taste

I don't usually measure the ingredients, eyeballing works fine with a recipe like this one. A bit more or less of this or that won't really change the final result.

Boil the Eggs and Slice Everything.

Start by boiling the eggs. We need them hard boiled for easy slicing. In the meantime, slice the sausages, kielbasa, bacon and potatoes. Throw the meaty bits into a pan and fry them until they start to brown.

Form the First Layer of Potatoes.

I went for two layers of potatoes for this casserole. If you have a very deep baking dish, you can do 3 layers. Sprinkle the bottom of the dish with some olive oil and form the first layer. Season with salt and pepper.

In With the Good Things.

Put the fried bacon, sliced eggs, sausages and kielbasa on top of the potato layer. Cut or tear the fresh mozzarella (1 ball) into chunks and add those too. Try to distribute these ingredients as evenly as possible.

Form the Second Potato Layer.

Put the rest of the potatoes into the baking dish, make sure all parts are evenly covered. Season with salt and pepper again.

Mix Heavy Cream With Parmigiano.

Mix about a cup and half of heavy whipping cream with grated Parmigiano cheese and pour this mix over the potatoes evenly. Sprinkle the top with some red paprika to give it a nice color.

It's Time to Bake.

Cover the casserole with foil and bake in the oven for 30 minutes at 220C/425F. Remove the foil after 30 minutes and keep baking for about 20 more minutes.

We Need More Cheese Now!

Once the potatoes become soft an fully cooked, take the casserole out of the oven and add cheese on top of the potatoes. I used shredded mozzarella and one more fresh mozzarella ball. You can totally use a different cheese type! Any type that melts nicely is a good choice.

Put the casserole back into the oven and broil the cheese on high heat. This should take 8 or 10 minutes.

Time to Serve.

We are done and it's time to serve. The whole process shouldn't take longer than an hour and 10 or 20 minutes.

You can use some chives or parsley for garnish... a bit of sour cream, some vegetable salad or simple pickles go great with this potato casserole too.
