Loaded Baked Potato Soup! Comfort Food at It’s Finest!

Loaded Baked Potato Soup is a favorite at my house and easy to make.

Supplies

6 to 8 medium cooked russet baked potatoes (diced)
2/3 cup butter or margarine
2/3 cup all purpose flour
7 cups milk
1 cup sour cream
1 cup cheddar cheese
12-14 strips of fully cooked bacon
1/2 tsp Ground black pepper (to taste)
1 tsp Salt (to taste)
Optional - Green Onion diced

Making the Base

The base of the soup is simple in a large pot place the 2/3 cup butter and melt. Once melted start to add the 2/3 cup flour a little at a time mixing till combined. Once combined begin to add the milk a little at a time whisking it till combined, adding milk until you have added all 7 cups. Simmer on medium stirring regularly.

Add the Ingredients and Boom It’s Done!

Set aside some diced bacon, cheddar cheese, and sour cream for garnish.

To the simmering base add the diced potatoes, sour cream, cheddar cheese, and bacon. Mix to combine.

Now added black pepper and salt until the soup tastes how you would like it.

Reduce heat and simmer while the base thickens. Stir regularly the base thickens to where it is difficult to boil. At this point the soup is ready to serve.

Garnish with your cheddar cheese, diced bacon, and a dash of sour cream. You can also add some diced green onion if you enjoy that.
