Lemon and Blueberry Scones
In this Instructable I will show you how to make scones, more specifically, lemon blueberry scones. Mmm so yummy! I had a request from a friend of mine to make these homemade scones so here we go. They are very easy to make, if I can make them, you can make them. Let's get baking!

Ingredients/Tools

Ingredients:
- 2 cups all-purpose flour (plain flour) (256g)
- 1/3 cup of white granulated sugar (68g)
- 1 tsp. of baking powder (5g)
- 1/4 tsp. of baking soda (1g)
- 1/2 tsp. of salt (table salt) (2g)
- 1/2 cup or 8 Tbsp. of unsalted butter (115g)
- 1 cup of blueberries (100g)
- 1/2 cup of sour cream (115g)
- 1 large egg zest from one lemon
Glaze:
- 1 1/3 cup of powdered sugar (165g)
- 2 Tbsp. of melted unsalted butter (28g)
- 1/4 cup lemon juice (60mL)

Mix Those Dry Ingredients
First lets preheat the oven to 400 F (205 C). Place the rack in the middle of the oven. Now let's mix our dry ingredients in a large bowl. Whisk together your flour, sugar, salt, baking soda, and baking powder. Then add in your lemon zest and whisk that in.
All About the Butter
Now we take our butter, it helps if you freeze it beforehand, and grate it on a cheese grater, we want really small pieces of butter. Then place the butter in with the flour mixture and mix it with your hands until it resembles course crumbs. We want all the dry parts to get coated with some butter.
Egg and Sour Cream
Now let's whisk together our egg and our sour cream.
Pour, Mix, Shape
Now pour in your egg and sour cream mixture with your dry mixture. Add in your blueberries. Then with a wooden spoon or spatula gently start stirring. Then switch to your hands. Be careful not to smash up the blueberries. Then pour the dough onto a lightly floured surface or on a silicon baking mat. Push all the dough together and shape into a large disc.
Cut, Move, Shape, Bake
Now lets cut the disc dividing each cut so we wind up with 8 pie like slices. Then use a spatula and rearrange them on the silicone mat or parchment paper lined sheet pan. If any of them fall apart a little bit, you can push the dough back in, go through and do a final shaping with your hands, to make them look a little nicer. Then bake for 15 to 17 minutes, until they are nice and golden brown.
Lemon Glaze
Mmm it smells great in the kitchen. After the scones come out of the oven let them cool for about 10 minutes. At the 10 minute mark let's make our lemon glaze. Melt your butter and add to a bowl, then add your lemon juice, then mix in your powdered sugar until you get your desired thickness.
Just Glaze It!
Now we pour our glaze over the scones. What I like to do is do one layer, then let it dry for 5 to 10 minutes, then do a second layer of glaze...oh yeah, super yummy. Now let the glaze dry, and then they will be ready to eat. You won't be sorry! Enjoy! :)
