Lemon Yogurt Muffins

These are lemon yogurt muffins. Made from only eight ingredients, nine if you include the glaze, these are a perfect Saturday morning breakfast, but they do well anytime. With that, let's get to baking!

Supplies

1 3/4 cup flour

1/2 cup sugar

1 1/2 tsp. baking powder

1/4 tsp. salt

1 egg

1/3 cup cooking oil

1 cup vanilla yogurt

1 Tbsp. lemon juice

The Dry Ingredients

Pre-Heat oven to 350 Fahrenheit

Mix dry ingredients.

1 3/4 cup flour

1/2 cup sugar

1 1/2 tsp. baking powder

1/4 tsp. salt

The Wet Ingredients

In a separate bowl whisk together

1 egg

1/3 cup cooking oil

1 cup vanilla yogurt

1 tbsp. lemon juice

Mix Dry and Wet Ingredients

Pour the dry ingredients into the bowl for the wet ingredients, at this point switch to a spoon, mix until just wet.

Pour the Batter

Scoop the batter into the cup filling them almost to the top.

Bake

Put them in your preheated oven for 18 minutes.

Glaze

While the muffins bake combine 1/2 cup powdered sugar and 4 teaspoons lemon juice. Stir until mixed.

Let the muffins cool, remove them from the pan, put the muffins onto a cooling rack and drizzle the glaze over. While not necessary I recommend putting a cookie sheet under. After this eat up!
