Lemon Poppy Seed Bread

Lemon Poppy Seed Bread is an easy-to-make quick bread that tastes sweet and full of lemon flavor. It is a great summer dessert to make, made better with the addition of lemon glaze drizzled over the top.

Ingredients

Ingredients: (makes 1 loaf)
1 ¾ cups all purpose flour
3 tablespoons poppy seeds
½ teaspoon salt
2 teaspoon baking powder
¼ teaspoon baking soda
½ cup vegetable oil
3 eggs
⅔ cup sugar
1 tsp vanilla extract
½ cup yogurt
¼ cup milk
Juice from 1 large lemon
Zest from 2 lemons
Icing:
Juice from 2 lemons
1 cup confectioner’s sugar
Prep

Preheat oven to 350 degrees. Spray a standard loaf pan with nonstick spray.

In a medium bowl, combine flour, poppy seeds, salt, baking powder, and baking soda.
Wet

In the bowl of a stand mixer, combine oil, sugar, mixing well. Add eggs, mixing again until completely incorporated. Add lemon juice, zest, vanilla, yogurt, and milk, and mix until combined.

Add flour mixture gradually to the wet mixture in the stand mixer, mixing until combined.
Bake It

Once combined, pour into the greased loaf pan, and bake in preheated oven for 50+ minutes, until a toothpick inserted into the middle comes out clean.
Take out of oven and cool.

Once cool, whip up the icing (juice from 2 lemons + confectioners sugar) in a small bowl. Adjust confectioners sugar accordingly with how much juice you have.
Drizzle icing over loaf and cut into pieces before serving.
