Lemon Lime Cake With Berry Almond Flowers

I absolutely love lime! So I couldn't resist making a lemon lime flavored cake. Add cute little berry almond flowers and it's almost too cute to eat.

Ingredients

1 box lemon cake mix
1 3oz lime gelatin
1/3 cup vegetable oil
3 eggs
3/4 cup water
1/2 cup orange juice
powdered sugar
1 lime
Vanilla frosting
raspberries
blueberries
slivered almonds
sliced almonds

Lemon Lime Cake

Preheat oven to 350.
Mix together cake mix, lime gelatin, oil, eggs, water, and orange juice.

Bake

Pour equal amounts of batter in the two pans and bake at 350 for 25 minutes.

(Don't forget to oil your pans and lightly dust with flour.)

Make the Glaze

1 cup powdered sugar
Juice from 1/2 lime
1-2 Tbsp water


Squeeze lime juice in a small saucepan. Add one cup powdered sugar. Add just enough water to dissolve the sugar. Just a few tablespoons will do. Heat over low heat until smooth. If your mixture is too thin, keep adding sugar. If you want extra lime flavor (like me) add some more lime. When the cakes come out of the oven, coat each cake with the lime glaze. It will give a nice lime bite to each bite of cake.

Tip: To get more juice out of your limes, microwave for 30 seconds and roll on a counter-top before slicing open.

Decorate

Add icing and it's time for the fun part, making the flowers!
Cover the cake with berries and place slivered and/or almond slices all around to form petals.
And voila, you now have beautiful, edible flowers!   ;)
