Lemon Garlic Zesty Fried Rice Recipe
In this instructable I am going to show you how to make a delicious lemon garlic fried rice with fresh vegetables that is 100% vegan and food allergy friendly too! (Free of the top food allergens).
Supplies
Ingredients
2 – 4 cups of cooked rice (depending on how many people you are serving)
3 cloves of fresh garlic (diced finely)
1 medium sweet onion
1 small bunch of green onion
2 small bunches of broccoli
6 – 8 spears of asparagus
1 small zucchini
1 Lemon
Cilantro
2 tbsp olive oil
½ tbsp champagne vinegar
1 tsp salt
1 tsp sugar
Optional: any fresh vegetables can be added to your preference
Equipment
Large pan
Tongs or spatula
Lemon squeezer / zester
Measuring spoons
Prepare Vegetables
Wash and slice vegetables to preferred size taking care to save the tops of the green onions for later.
Cooking
- Add 2 tbsp olive oil to a large pan on medium heat. Add onion and sauté until soft (about 2 – 3 min).
- Add broccoli and cook until onions are caramelized, stirring frequently.
- Add asparagus, zucchini and sauté until soft then add the green onions, garlic, and salt. Sautee for another few minutes. While this is cooking, squeeze lemon juice into a container filtering out seeds and add 1tsp sugar. (Save the lemon for zesting after squeezing).
- Add cooked rice and champagne vinegar, turn heat to high and stir fry for 1-2 minutes. Add lemon juice mixture and stir fry on high for another 1-2 minutes.
- Add cilantro and the tops of the green onion and gently fold it in for 30 seconds. Add lemon zest.
Serve and Enjoy!
