Lemon Butter Cookies
In this Instructable I will show you how to make Lemon Butter Cookies. This recipe for lemon butter cookies is really easy to make using simple ingredients, if I can make them, you can make them. I had a request to make these, so let's get baking!

Ingredients/Tools

Ingredients:
- 2 sticks, unsalted butter, softened 1 cup (226g)
- 1 cup powdered sugar (confectioner's) (125g)
- 1 Tbsp of lemon zest (6g)
- 1 1/2 Tbsp of lemon juice (fresh) (22g)
- 2 cups of all-purpose flour (256g)
- 3/4 tsp. of salt (3.5g) (you could add less if you want 1/2 tsp.)
Glaze
- 1/2 cup and 2 Tbsp. powdered sugar (86g)
- 1 Tbsp lemon juice (15g)
- 1 Tbsp unsalted butter (softened) (15g)
- Lemon zest for garnishing (optional)

Cream That Sugar and Butter
First let's preheat the oven to 350 degrees F or 176 C. Now let's take our softened unsalted butter and add to a large bowl. Add the powdered sugar and mix well with a stand mixer or hand mixer. Then scrape the sides of the bowl with a spatula.
Lemon Juice and Lemon Zesty for Awesome Lemon Flavor
Now it is time to add our lemon juice and lemon zest, then mix those in really well.
Flour It Up!
Lastly to finish off our dough we will add our flour, add a third of it at a time, with the salt being added with the first third, and scrape the sides of the bowl between each stage of flour. Now just clean off those beaters.
They See Me Rollin'
Now it is time to roll out our cookies. In order to get roughly all the same sized cookies I like to take a tablespoon and scoop it out, then roll it between my hands. Next place it on the silicon mat or parchment paper lined cookie sheet. After you have them all on the sheet, gently push them down with your fingers. now they are ready to be baked. 350 F or 176 C for 12 to 14 minutes. Rotate the pan 180 degrees after 6 minutes, I also like to switch the racks as well, trying to get as even baking as possible. They will be lightly browned on the edges and golden brown on the bottoms when they are done. :)
Make That Glaze
Now let's make some yummy glaze. For this we combine our powdered sugar, lemon juice, and softened butter, and just mix with a fork or whisk. Easy as that.
Frost, Garnish, Serve
Now just dab a little glaze or frosting on the top, smooth it out with a spatula, and then add a little lemon zest as a garnish. This recipe makes between 24 and 30 cookies depending on the size you make them. Enjoy!
