Lemon Butter Baked Tilapia With Fragrant Butter Rice

Lemon Butter Baked Tilapia with Butter Rice is the comfort midweek meal. It doesn't requires more time and preparation, but it tastes really great.

It was big hit in my home. I hope you too will enjoy :)

Ingredients for Lemon Butter Baked Tilapia

3 Tilapia fillets

1/2 cup unsalted butter

2 tbsp of lemon juice

5 Garlic cloves

1/4 cup cilantro, chopped

1/2 tsp salt, divided

1/4 tsp Black pepper powder

Prepare Fish Fillets

Wash fillets with water and pat dry it with paper towel.

Season the fillets with salt and pepper and set aside.

Lemon Butter Sauce

Wash cilantro and garlic, chop them finely.

Take butter in microwave safe container, microwave it for 1 minute high or until it melted completely.

Add chopped garlic, cilantro, lemon juice and salt to the melted butter. Mix well until all incorporated.

Lemon Butter sauce is ready.

Bake It..

Preheat oven to 400 degrees.

Place fish fillets on greased baking tray.

Pour lemon butter sauce over the fillets.

Bake it for 15 to 20 minutes or until it cooked well.

Baked fillets are ready to serve.. Serve hot!

Ingredients for Butter Rice

1/2 cup unsalted Butter

2 cup Long grain rice

4 cup chicken broth

1 purple onion

3 Garlic cloves

3 Bay leaves

1 cup of frozen peas and corn

1/4 tsp of Black pepper powder

1/4 tsp salt

Fragrant Butter Rice

Wash rice with water and soak it in water for 15 minutes.

Chop onion and garlic, set aside.

Melt butter in large pan over medium heat.

Add garlic and onion, cook stirring until it become translucent.

Add peas, corn, salt and pepper. Cook for couple more minutes.

Now add chicken broth and bay leaves. Bring it to boil.

Add soaked rice into it and close the pan with its lid. Cook untill liquid is asorbed.

Butter Rice is ready now!

Remove it from heat, discard bay leaves, fluff the rice with fork and Serve hot.
