Lemon Blueberry Bread

Lemon Blueberry Bread

Ingredients you will need:

1 1/2 c all-purpose flour

1 tsp baking powder

1 tsp salt

1/3 c unsalted butter, melted

1 c sugar

2 eggs

1/2 tsp vanilla extract

2 tsp lemon zest

2 tbsp lemon juice

1/2 tsp ground cloves

1/2 c milk

1 c blueberries

2 tbsp flour

For the glaze:

1/2 tsp vanilla extract

pinch of lemon zest

2 tbsp lemon juice

2 c powdered sugar

2 tbsp unsalted butter

Mix Your Dry Ingredients

Combine flour, salt and baking powder.

Grab Your Lemon

Zest your lemon(s), then juice it. You might need to juice two lemons to get the total of 4 tbsp of lemon juice you will need for both the bread and glaze.

Electric Mixer

Using your electric mixer, combine sugar, eggs, vanilla, melted butter, lemon zest, ground cloves and lemon juice.

You will want to mix these until thoroughly combined.

Flour and Milk, Rinse and Repeat

Pour half of your flour mixture into the batter, mix until combined, then pour half of your milk into the mixture, mix until combined. Now you are going to pour the rest of your flour in, mix until combined and to finish this step off, pour the last of your milk in and mix until combined.

Blueberries

Wash and drain your blueberries, then stir them in a bowl with 2 tbsp of flour.

Add the blueberries to the batter and stir in with a spoon.

Batter Up!

Pour your batter into your mini loaf pan that's been coated with non-stick cooking spray.

Bake!

Bake in the oven at 350° for 30 minutes or until golden brown. Remove from oven and let cool.

Now to Make the Glaze

In a saucepan, combine the melted butter, powdered sugar, lemon juice, vanilla and lemon zest. Stir until smooth, then drizzle over your bread until your satisfied with the coverage.

Try Not to Eat Them All at Once.

This is the perfect thing to take to that family reunion or office party. I brought some to work and a coworker that said 'I hate blueberries, but I'll try it' actually ended up asking me for the recipe.
