Lehsuni Palak Paneer Spinach with garlic and paneer is a treat to those who love the strong flavors of garlic because this recipe is prepared by adding lots of garlic/lehsun. It's a delicious twist to regular Palak Paneer with generous amount of garlic tadka. The three main ingredient of recipe have there own health benefits

 Spinach/ palak : Spinach is a superfood. It is loaded with tons of nutrients in a low-calorie package and are important for skin, hair, and bone health. They also provide protein, iron, vitamins, and minerals

Paneer/ cottage cheese: 

Paneer is an Indian cheese that is high in nutritive value.


 Paneer provides instant energy to the body Hence, this should be part of your daily diet especially if you are a vegetarian as it fulfills protein need of the body.


Garlic : . It is rich in minerals like phosphorus, zinc, potassium, and magnesium. Vitamins C, K, Folate, niacin and thiamine also are found abundantly in garlic.

Supplies

Ingredients

1 big bunch of palak/ spinach 

200 gram paneer/ cottage cheese( grate 50 gram and rest cut in cubes)

1tbsp gheee

1 chopped onion

1 chopped tomatoe

2finely chopped green chillies

1tbsp besan

1/4 TSP haldi/ tumeric

1tsp red chilli powder or as per taste 

1tsp coriander powder

1tsp garam masala

1tsp kasuri methi

Salt as per taste

1tsp sugar

1/2 jeera/ cumin seeds

1tbsp finely chopped garlic



Ingredients

1 big bunch of palak/ spinach

1tsp garam masala

1tsp kasuri methi

Salt as per taste

1tsp sugar

1/2 jeera/ cumin seeds

1tbsp finely chopped garlic



Ingredients for tempering

2 tbsp ghee

1/2 tsp cumin

2tbsp finely chopped garlic

1/2 tsp red chilli powder

1 red dried chilli

Blanching of Palak / Spinach

Boil sufficient water in a deep non stick pan. Add the spinach and cook for 3 to 4: min , drain the leaves and dip them in iced water then squeeze the palak amd divide them into two portions


Grind one portion into smooth paste and roughly chopped another portion

Shallow Fry Paneer Cubes

Heat 1 tablespoon ghee in a pan. Add paneer cubes and saute them for 4 to 5 minutes or until light golden brown in color over a medium to low heat. Take it out in a bowl and keep it aside.

Heat oil in a kadai. Temper cumin seeds finely chopped garlic saute for a while then Add onion, green chilli Saute till onion turns transparent then add tomato along with tumeric, coriander powder, salt and red chilli powder saute till it start leaving sides now add 1tbsp of gram flour/ besan, and roughly chopped palak cook on high flame till the raw smell of besan goes away.

Now add palak puree mix well and then add grated paneer mix well close the lid ( do not close it completely leave some space ) cool for 5 to 6 min after 5 min stir it and then add gram masala, kasuri methi, sugar mix well add prepared shallow fried paneer cubes mix well cook for 3to 5 min and then it's ready to go in serving bowl

Preparing Lehsun/ Garlic Tempering and Plating Lehsuni Palak Paneer

Now in a small tempering pan add 2tbsp of ghee onces it's hot add cumin as soon as cumin starts to splutter add finely chopped garlic saute till garlic has golden brown colour then add red chill powder and whole red dried chilli turn off the heat transfer this tenparing to prepared palak paneer and there your lehsuni palak paneer is ready.
