Kothimbir Vadi

_ Kothimbir vadi is famous recipe of Maharashtra region of india perfect for breakfast.
_ kothimbir in marathi means cilantro or coriander leaves and vadi means cut squares or slices.
_ These are savoury cilantro gram flour cakes which can be either steamed or shallow fried or even deep fried.
_ When you have lot of stock for cilantro we can make this delicious breakfast.

Supplies

Ingredients:

_ Two cups coriander leaves

_ One cup chick pea flour ( Besan )

_ 1/4 Cup Rice flour

_ Teaspoon Ginger garlic paste

_ Salt as per taste

_ Two chopped green chillies

_ Red chilli powder

_ Half teaspoon chat masala powder

_ Half Teaspoon Garam masala powder

_ Two tablespoon water

_ Little lime juice

_ Cooking oil

Add All Spices to Coriander Leaves:

_ Take 2 cups of freshly chopped Coriander leaves.
_ Add 2 chopped green chillies and Teaspoon Red chilli powder.

Add Remaining Spices:

_ Add salt as per taste,Half Teaspoon Garam masala powder and Half Teaspoon Chat masala powder .

Add Ginger Garlic Paste and Mix All Spices With Coriander Leaves

_. Add teaspoon Ginger garlic paste .
_ Mix all the added spices with coriander leaves.

Add Chick Pea Flour ( Besan) and Rice Flour:

_ Next add one cup chick pea flour ( Besan) and 1/4 cup rice flour

Mix

_ Mix the added flours with coriander leaves spice mixture .

Add 2 Tablespoon Water and Make a Dough

_ We need to add very little water about 2 to 3 Table spoon and make a dough.( No need of extra water)
_ Squeeze little lime juice before adding water .

Roll Dough in to Cylindrical Shape

_ After the dough is made roll it in to cylindrical shape as shown in my image.

Grease the Colander With Little Oil

_ Now Grease the colander with little oil and place the rolled dough on it

Steam

_ Take little water in a vessel and heat it .Place the colander on top of vessel ,Cover with lid and steam the dough for 20 minutes

Cut Steamed Dough in to Slices

_ Cut the steamed dough in to slices. We can eat them as it is after steaming. But if we prefer crispy texture we need to deep fry them.

Fry the Sliced Pieces

_ For crispy and crunchy texture we need to deep fry the steamed slices.
_ Heat the oil in wok and fry the steamed slices .
