Kit Scat Bar

For years I have been making backpacking brownies with chocolate chips, powdered sugar, powdered milk, chocolate graham crackers. I was helping my wife with Christmas baking / candy when I had an idea, making a better version that was more like candy. Some sort of parcel. Well here are the results, the scat name is due to some mistakes in dipping that changed the look to resemble animal scat (poo). You could do it on purpose if you want them all to look like scat.

In era of companies downsizing products this too happened with graham crackers, they now come in 14oz as opposed to 1lb boxes.  That change has worked out for the better, producing a more cake like consistency as opposed to crispy, so I decided to make it into a candy.

Ingredients:
Filling
1/3 box of Chocolate Graham Crackers (one package)
3/4 cup of milk chocolate morsels 
2 TBL of powdered sugar
1/4 cup milk

Glaze:
1 cup of milk chocolate morsels
1 tsp shortening (for shine, or paraffin)

Tools not obvious when making candy:
1 gallon storage bag
Freezer 
Microwave



Making the Filling

Place the graham crackers in the gallon food storage bag and crush then will (use a rolling pin if you want I did).

Place 3/4 cup of chocolate morsels and 2 TBL of powdered sugar in a glass bowl, cover and place in a microwave for 30 seconds on 50% then mix. Repeat until almost smooth, at which point only put it in for 15 seconds.

Between one of the times you heat the chocolate place the milk in a small glass dish and heat it up for about 30 seconds until warm. 

Once the chocolate is melted and the milk warmed, mix the two quickly it should have the consistency of a ganache (thicker than hot chocolate less than frosting).

Immediately pour it into the bag close the bag (take the air out) and mix with your hands.

Once mixed well place in the freezer for about 3 minutes. 


Form Bar and Cut

Take the bag out of the freezer, use a spatula to push the mixture twords the bottom of the bag. Use the natural contour of the bag to create a bar about 9in by 3in by 1/2 in. 
Once you do this place it in the freezer for about 5 - 10 min to harden (not all the way).

Take it out and slice it in 1/2  x 3in slivers if you want the "Kit Kat" look leave it as is, otherwise slice it once down the middle to produce normal size candies.

Place them on a wax paper covered cookie sheet and place them in the freezer.



Dip in Chocolate and Done!

Wait about 10 min while they harden in the freezer then take 1 cup of chocolate morsels and 1tsp of shortening and place it in a glass bowl.
Again use the 30 second at 50% melting procedure you used before.

Once fully melted pull the candy from the freezer and push them down to one end they should be hard.

Dip one at at time into the chocolate, I use 2 spoons to flip it over and make sure it is coated, then pick it up let some chocolate drip if necessary and place it on the empty side of the cookie sheet. 

Continue until done, place the whole sheet when done into the freezer or refrigerator for about 10 minuets until the chocolate has hardened well. 

That is it, almost no mess and you have home made candy.

Almost everyone thought it was cake filled, you could add a filling between thinner layer for something even better.
