Kiri Tofee / Milk Toffee
This is a popular Sri Lankan sweet. It would be very hard to find even one person who has not had it! The direct translation of Kiri Toffe is Milk Tofee.
This tofee is very tasty and super easy to make. Store bought Kiri Toffee can be kept out for 3 months. I have been unable to test this theory as my kiri toffees never lasted 1 month...it was eaten long before a week!

400 g sweet condensed milk
220 g sugar
1 tbs Vanilla essence
1/4 Cup water
2 tbs Butter.
Cadju (optional)
Usually cadju is chopped and added to the mixture. But I have not added it.
In a Non Stick Pan Pour the Water and Add the Sugar. Stir in Fire Till Sugar Dissolves.
Add the Butter and Mix.
Now Add the Sweetened Condensed Milk and Stir.
Keep Stirring. When It Starts to Boil, Stir in Low Fire.
If you want to add cadju , add it at the end of this step .
Stir Till Mixture Gets Thick and Comes Off the Pan.
Grease Your Dish Well.
It would be easier if you line your dish with oil paper.
Spread the Mixture in Your Dish.
While It's Still Warm Cut Into Squares or Diamond Shape. Once Its Cool It Would Be Very Difficult to Cut.

Here it is all cooled and hard. This is where I regretted not using an
oil paper for the bottom. Still with a bit of elbow grease I was able to get the squares off.
