Kid Approved Ham and Cheese Potato Skins
What to do when the young makers get hungry at The Makerspace? In this instance we made ham and cheese stuffed potato skins.
We are lucky enough to have a fridge at our Makerspace so we tend to have some ingredients to hand.
We used potatoes, butter, ham, cheese, spring onions and spreadable cheese.
Bake Your Potatoes
Microwave your potatoes on full power for 4-5 minutes before baking to speed up cooking time, then bake them in the oven for about 30mins at 200 degrees celsius or use, as we did, a halogen oven which will reduce the time.
Test them by using a knife to see if they are soft inside.
Cut Open Potatoes, Scrape Out Potato
Cut the potatoes in half and allow to cool slightly.
Scrape out the potato into a bowl with a spoon, leaving the skin intact.
Mash Potato and Add Ham and Onions
Mash the potato with 1 tbsp butter, then chop the ham and onions and add to the potatoes.
Fill Potato Skins and Add Cheese
Fill the potato skins with the mashed potato mixture. Carefully pat the potato into the skin so as not to break the skin.
Sprinkle with grated cheese over the top.
Bake and Serve
Place back in the oven or halogen until warmed through, the cheese has melted and looks golden brown.
Serve up to the hungry makers either on their own or with a salad .
