Kicken Chicken Cupcakes
I love buffalo chicken ANYTHING. I also love cupcakes. With their POWERS combined I created these tasty Superbowl appetizers. They are very simple to make, and require very few ingredients. More importantly, people will be asking more questions about these then they will the game. ;)
Ingredients
To make 7 cupcakes you will need:
1 cup of Panko Crumbs (I'm thinking you could substitute crushed saltines)
3 Tbs of your favorite wing sauce or hot sauce
1 lb. Thin cut chicken strips.(you can also use chicken breasts that you thin and slice yourself)
Salt & Pepper to taste
Blue cheese or Ranch dressing
OPTIONAL: celery to garnish

Make the Cups
OPTIONAL: If you wish you can lightly spray the pan. I sprayed mine but I'm confident that the juices from the chicken are sufficient to allow for easy removal.
`To make the cups take one strip and fill the bottom of a cup in a cupcake pan.
`Then take a second strip and curl it around the sides of the cup.
`Make sure you have a nice open center that can be filled with the stuffing.
`Repeat this process until you run out of chicken.

Make the Stuffing
I call the filling stuffing because once it's baked it has that same "stuffing like" texture.
`Pour 1 cup of Panko Crumbs in a bowl
`Mix in 3 Tbs of wing sauce
`Stir it together so that the crumbs are evenly coated.
`Fill each cup with a large spoonful of filling.
`Repeat this until all your cups are filled. (You may have to whip up some more if you come up short)

Baking
`Just before baking them lightly salt & pepper them.
`Now that all your cupcakes are filled and seasoned you are ready to bake them.
`Bake them @ 375* for 20 minutes.

Topping Them Off
`Once they are baked simply remove them from the pan.
`"frost" them with your blue cheese or ranch dressing.
`If you would like you can quarter a stick of celery and add one to each cupcake as a garnish.
`They are now ready to serve just in time for the BIG GAME!
