Creamy Kheer Dessert | Upcycled Rice Leftovers Recipe

Rice Kheer is probably one of the simplest cottage recipes I know and love making again and again. It is super easy to cook and is a decent comfort food if you like yours to be sweet. It's also my favorite cooling dessert to beat the summer heat!

Though it's usually made with fresh steamed rice, today we're going to upcycle...whipping up some kheer is a cool way to use up leftover rice when I'm craving something sweet or tired of the fried rice dishes. It's smooth, it's creamy, it's done under 15 minutes... what's not to like.

This recipe needs only four main ingredients and optional toppings. You can read the short recipe or watch the 60 second video below or do both!

Supplies

Ingredients

- Steamed rice
- Milk (whole/full cream milk is the way to go here)
- Sugar
- Cardamom powder
- Roasted almonds (you can also use other toppings like your favourite nuts, dry fruits, etc.)

I don't really measure the ingredients. The sugar depends on how sweet you want it to be and you can adjust the milk till you get the consistency you like!

Other supplies:
- Heavy bottomed pot
- Food processor/mixer
- Mixing Spoon, serving bowls & spoons

Smoothen the Rice



Traditionally the rice is cooked to be somewhat soft and sticky for this recipe, but as we're using leftover rice that doesn't matter. Put the rice in a blender with some water to get the consistency as shown in the above video.

A Smooth TipI like it to be grainy but if you want to make it smoother, go ahead and blend it some more!

  • Mix together the sugar & milk with blended rice and cook on low heat for around 10 minutes. Keep stirring occasionally so the kheer doesn't stick to the pot.

  • Once the milk thickens and everything is smoother than before, season with cardamom powder and add your favourite toppings.

  • Serve warm or chilled.
