Keto Lemon Cake GLUTEN FREE __ LOW CARB
A lot of keto cakes are too dry but not this one. A delicious gluten free lemon cake that is perfect when you're craving something sweet. It is an easy recipe and you won't regret to try it.
Supplies
- 6 eggs
- 1 cup coconut flour (do not substitute)
- 1/4 cup erythritol
- 1/4 coconut oil
- 1/2 cup almond milk
- juice of 1 lemon
- zest of 1 lemon
- 1 tsp baking powder
Mix Wet Ingredients
Whisk the eggs until they bleach. Then add the rest of wet ingredients and mix.
Pre-heat oven at 350 F.
Add Dry Ingredients
Add the rest of ingredients and mix carefully.
Bake
Paint with olive oil, butter or a non stick spray the cake pan. Put the batter in the cake and put in the oven at 350 F for 45 minutes.
Frosting
Mix the powdered erythritol with cream or veggie cream.
Then spread the frosting when the cake is cold.
