Karela Chips

You must be wondering what is karela chips right? So here is the answer to your curiosity. You must have tried potato chips or banana chips at least once in your life. It is basically bitter gourd chips and very famous here in India, bitter gourd is marinated and deep fried to make a yummy crunchy snack. Today I will be sharing my mom's special secret recipe of karela chips (please don't tell her she will give me maar). You know the best part? These chips are not bitter at all. It is crunchy yummy and has a bit of spicyyyy flavor. Trust me you are going to love it.

Supplies
- Karela (Bitter gourd).
- Salt.
- Turmeric powder.
- Red chili powder.
- Coriander cumin powder.
- Sesame seeds
- Ginger garlic paste.
- All purpose flour.
- Rice flour.
- Corn flour.
- Oil.
Wash Thoroughly
- Wash the bitter gourd twice or thrice with luke warm water.
- Peel the skin if you want. Peeling the skin will reduce the bitterness of the gourd.
- I haven't peeled the skin here.
Slice
- Once washed.
- Slice the bitter gourd.
- Don't slice it too thick. Make thin slices. More thin slices, better the crunch of the karela chips.
- When completed, wash it again.
Marinate
- Take the thinly sliced bitter gourd in a bowl.
- To that, add salt as per taste.
- Add the following spices:
- 1/2 tablespoon Turmeric powder.
- 1 tablespoon Red chili powder.
- 1 tablespoon Coriander cumin powder.
- Add 1 tablespoon of Ginger garlic paste.
- Add 1 tablespoon of Sesame seeds.
- Add the following ingredients:
- 2 tablespoon All purpose flour.
- 2 tablespoon Corn flour.
- 2 tablespoon Rice flour.
- Mix everything very well.
- Our marination is ready.
Let It Set
- After mixing everything, keep this marinade aside for 10-15 minutes in the fridge.
- Don't keep it for too long as bitter gourd leaves water when mixed with salt and that will spoil our marinade.
- 10-15 minutes is enough.
Deep Fry
- In a big pan, heat oil.
- Here I have used vegetable oil.
- Once the oil is hot, add the karela slices carefully into the hot oil.
- Let it fry for 2-3 minutes.
- Keep flipping in between so as to avoid burning the chips.
- When it is all crunchy, sieve and remove it on to a paper towel to soak the excess oil.
- You can use air fryer too, it would make this much healthier.
- I didn't have an air fryer, hence deep fried, you can easily air fry if you have the equipment.
