Kalbi BBQ Beef

I've seen many variations on this recipe but here is my version. I changed a few ingredients to suit my taste. Its a winner on almost any cut of beef. The high sugar content will make it brown quickly but when you see that don't be alarmed its not burnt is caramelized and that's tasty.......

Marinade

You will need at least 2-3 lbs Korean Style Short Ribs. You can substitute a flank steak cut into small strips or any other cut you prefer. I like to see a good marbleized pattern on the meat.

Marinade:

  • 1/4 cup Reduced Sodium Soy Sauce
  • 1/4 cup Lemon Ponzu
  • 1/4 cup Mirrin
  • 1/3 cup sliced Green Onions
  • 1/2 cup Brown Sugar
  • 1/4 cup Water
  • 2 tablespoons Chopped Garlic
  • 2 tablespoons Dark Sesame Oil
  • 1/4 teaspoon Black Pepper

Mix all ingredients together and place the beef in a bag with the mixture. I usually marinate it for 4 hours while I'm out getting the grill set up. overnight is good too. I've tried it with a tablespoon of Ginger too. That was good but not everyone likes Ginger.

You need a good hot grill. I prefer charcoal for this. At home I have a Gas and a Charcoal Grill side by side. Gas is fine for sausage and chicken but beef needs the smokey taste.

This batch I cooked on a monster grill. It takes two people and 3 bags of Charcoal to work this one. Luckily my son was there. There's about 20 lbs of beef on this grill and even some Veggie Dogs and 2 kinds of Veggie Burgers for those that want them.

When they're done you can add some more green onions on top but you have to be quick. they go fast.....
