At the moment in West Europe there is a case of Empty shelves for the second time caused ultimately by the COVID virus and now the war in ukraine, Although there no shortage as such the News media creates a shortage by suggestion and everyone runs out to buy stuff like Toilet paper, Flour and cooking oil. To this end I´d like to show you how you can get round this problem (if you don´t already have a stock before the crisis!) for example with your own Flour. whilst most of us see in the supermarkets bags of Wheat or Rye flour there are in fact alternatives how to make your own for example; Accorn Flour, Dandylion-Flower flour, Amarath seed, even cornflakes!! In this Instructable we will be making Flour from Rice, and I´ll show you a use too.

Grinding Options

There are several ways you can Grind your Rice, at the front left we have the good old Mortise and pedestal, works but will take a lot of time and energy. Next to it right is a small electro coffee Grinder, good just make sure not to fill it completely, leave a bit of space so it can circulate and grind everything. At the back to the left is an old hand coffee Grinder and it works just great you can see the result in the picture. In the middle at the back is a "Bullet" food mixer and lastly wand mixer with cutter in container, these are also two great methods. So you can see you get a good result with or without power.

Store It

When you have Ground your Rice to the consistancy you want there several options to store, the first is you could use a vacume maschine which sucks the air from the bag and then seals the bag, or you can choose a jar and fill that. Keep the flour cool and dark and sealed as there are flour mites and weevils which could cause your flour to spoil. Your flour is good for about a year, so don´t forget to mark a date on it so you can control the shelf life. It may stay a bit longer if you put it in the fridge.

USE IT !

This is a quick Emergency Bread recipe. All you need is 2 cups of Rice flour, a 1/2 tsp salt, 2 beaten eggs, about a cup of water, soup ladle and frying pan/skillet.

Put the Flour and salt in a bowl and mix it with a spoon add the water slowly and keep mixing when it gets a bit thicker but not too watery!, you can add the beaten eggs and mix up.

Now if you have not done so already you can heat up the pan. the dough turned out more like a pancake dough then bread so instead of having to roll out you can use a ladle. At first I used a whole scoop but it was hard to turn in the pan and broke up, so I used a half a scoop which worked out fine

Garnish It

When I was satisfied with it I took them out buttered them and used some mayonise then boiled egg (from Easter of coiurse) and cocktail sauce. Was great. The Rice bread had a nice consistancy, was a bit plain in taste (on its own) so maybe you can mix some pepper or spices into the dough before frying..

Maybe I will show some other flour like Accorn etc. in a later Instructable
