Jelly Drops
Gather Ingredients
2 cups Bisquick (or similar instant pancake mix)
1 cup Milk (I used rice milk because we currently refuse to tolerate the existence of lactose)
1 teaspoon Vanilla Extract
1 cookie sheet
Jelly
Powered Sugar (optional, but worth it)
Mix the Batter
Mix 1 cup of milk with 2 cups Bisquick. Stir until thick and gooey.
Add 1 teaspoon Vanilla Extract. Stir until thick and gooey.
Drop the Batter
Drop the batter on the cookie sheet. This recipe makes six "normal" hand sized Jelly Drops (or five normal sized and one jumbo depending on how much better is stolen by mommy and the kitchen helper)
Spoon out the batter and drop it evenly spaced on the cookie sheet. This is great for training kitchen helpers.
Bake and Jelly
Bake the dropped batter for 10 minutes at 375 F. The batter should be set on the outside, but will not be "browning" yet.
Use a spoon to pop a hole in the center of the half cooked batter. Fill the hole with the jelly flavor you love most.
Bake an additional 8 to 10 minutes at 375 F or until browning starts on the top of the biscuit. Allow to brown to your own liking, but be careful as they brown quickly and then burn at about 12 minutes.
Glaze
Make your powdered sugar glaze by mixing a spoonful of powdered sugar with a tiny bit of water. Stir rapidly. Add water in tiny amounts until you have a sugary glaze about the consistency of cough syrup.
Glaze gently by slowly spooning on the glaze. This is an optional, but yummy step.
