Jamaican Curry Chicken Recipe
Ingredients
o 1 whole chicken (3.5 lbs)
o 1 Medium Onions
o 1 whole sweet pepper
o 5 Cloves Garlic
o 6 Sprigs Fresh Thyme
o 3 teaspoon Salt
o 2 teaspoon Black pepper
o 2 teaspoon Poultry seasoning
o 1 Scotch bonnet pepper
o 6 tablespoon Curry powder
o 3 tablespoon Vegetable or Olive Oil
o 2 medium Potatoes (optional)

Method and Cooking Time
Method
1. First thing you want to do is to cut up chicken into small pieces
2. Clean Chicken, wash with lemon juice and water (squeeze lemon into water)
3. Drain water from Chicken
4. Add all dry ingredients (salt, black pepper, poultry seasoning, and curry powder)
5. Diced onions, sweet pepper, crush garlic, thyme and diced scotch bonnet pepper and then add to chicken
Let it marinate for 2 hours or sit overnight in refrigerator
Time to Cook
Take a dry saucepan put over medium heat, heat vegetable or olive oil, add marinated chicken into skillet and stir it around for 3 minutes, then add 2 cups of water and cover saucepan to let it simmer on low heat for an hour. Then add diced potatoes (optional), if you like and at this time you can do taste check if you need to add anything else like salt or pepper. Total cooking time is 1 hour and 15 minutes. Curry chicken is best paired with white rice. YUM YUM
