DOUGH
375g / 3 Cups Plain Flour
226g / 1 Cup Unsalted Butter (Cubed)
2tbsp Curry Powder
1/4tsp Turmeric
1/4tsp Salt
1 Large Egg
117ml / 3/4 Cup Ice Cold Water
Add the flour, spices and slat to a food processor and mix together. Add the butter and pulse. Whisk the egg and water together and pour into the mixture. Continue to pulse until clumps begin to form. Fraisage the dough by hand and bring together. Roll the dough out into a rectangle and create folds. Wrap the dough in a cling film and chill in the fridge for 30 minutes. Repeat the last two steps 3 more times over the course of 2 hours.
CURRIED BEED
250g / 8.9 oz Lean Mince Beef
1 Medium Sized Onion
3 Spring Onions
2 Garlic Cloves
1/2 Scotch Bonnet Pepper (Optional) (Remove The Seeds)
2tsp Curry Powder
1/2tsp Paprika
1/2tsp All-Purpose Seasoning
1/4tsp Thyme (Dried)
1/4tsp Cayenne Pepper
1/2tsp Rosemary (Dried)
235ml / 1 Cup Boiling Water + Beef Stock Cube
1tsp Worcestershire Sauce
45g / 1/2 Cup Breadcrumbs
Season the meat with salt and pepper and brown on a medium heat. Drain the excess oil and place back on the heat. Chop up the onions and garlic finely and add to the meat and cook until translucent. Add the spices, followed by the beef stock and Worcestershire sauce. Finish by adding the breadcrumbs and leaving to cool completely.
FILL & BAKE
Roll the dough out and use a medium sized bowl to cut out circles. Place 1 & 1/2tbsp of the meat mixture onto the centre of the circles. Brush the edges with an egg wash and fold over to form a semi circle. Seal the patties with a fork. Finish by brushing the patties with an egg wash. Bake at 190 degrees C / 374 degrees F for 25 - 30 minutes.
