Jaggery Rice
Jaggery Rice is basically an Asian recipe. It's very easy to make. Jaggery is used in Asian cuisine as it is more healthier than sugar. If jaggery is not available you can use brown sugar instead. I am using Ghee ( Clarified butter )in the recipe, but you can use vegetable oil as well.
Ingredients
- Rice : 1/2 kg
- Jaggury : 1/2 kg (if not available 1/2 kg of brown sugar can be used)
- Ghee (clarified butter) 100 ml (if not available 100 ml of oil can be used)
- Cardamom : 4 pieces
- Cloves : 6 pieces
- Few Coconut flakes for garnishing
Soaking of Rice
Soaked rice one hour before cooking.
Jaggery Syrup
In a sauce pan add 2 cups of water and jaggery. Bring it to boil then turn the flame to low and cook until jaggery melts.
Boiling Rice
Add water into the pan as water simmers on high flame, add soaked rice in it and cook on medium flame until it's partially cooked then sift rice in separate bowl.
Sauté
Add Ghee (Clarified butter), Cardamom and Cloves in the pan and Sauté them on medium flame for two minutes.
Adding All Ingredients
After Sauté add jaggery syrup in the pan, as syrup simmers on high flame, add partially boiled rice in it. When water evaporates cover it with lid and let it steam cook on low flame for 15 minutes, after that revert the layer of rice and cook for 10 more minutes.
Ready to Served
Garnish it with Coconut flakes and Jaggery Rice are ready to serve.
