Island-Style Chicken Skewers


One bite of the chicken and pineapple on these skewers and you will be transported to a tropical island where the white-sand beach is perfect for a fun-in-the-sun picnic. Everything you need is listed below. These are so easy to prepare and also very flavorful!
Ingredients:
Marinade:
2 ½ tablespoons ketchup
2 ½ tablespoon soy sauce
2 tablespoons green onion, thinly sliced
1 tablespoon sesame oil
1 tablespoon rice wine vinegar
1 tablespoon honey
2 teaspoons minced garlic
¼ teaspoon kosher salt
¼ teaspoon black pepper
¼ teaspoon ground ginger
¼ teaspoon onion powder
Skewers:
1 ¼ lbs. boneless skinless chicken thighs, cut into 1 x 3-inch strips
2 cups fresh pineapple chunks
4 teaspoons sesame seeds, optional
Supplies
4 (12-inch) water-soaked wooden skewers
Gas or charcoal grill
Platter for serving
Marinade:

For marinade, in a small bowl, stir together ketchup, soy sauce, green onion, sesame oil, rice wine vinegar, honey, garlic, salt, black pepper, ginger, and onion powder
Marinating Chicken:

Place chicken in a 1-quart resealable plastic bag. Pour marinade over chicken. Seal bag and work marinade evenly into chicken. Refrigerate for 2-3 hours.
Assembling Skewers:


For each skewer, thread a piece of chicken about ½-inch from one end. Add a pineapple chunk then wrap other end of chicken piece in a u-shape around pineapple chunk. Repeat threading chicken and pineapple, dividing evenly onto four skewers.
Grilling Skewers:



Heat a gas or charcoal grill to medium high heat. Lightly oil grill grates. Grill skewers for 5-7 minutes per side or until chicken is done and grill marks appear, turning once.
Serving Skewers:

Arrange skewers on a bed of grilled kale, curly green lettuce, or jasmine rice if desired. Sprinkle each serving with 1 teaspoon sesame seeds if desired. Serve immediately. Serves 4.
Notes:
Purple onion petals, mushrooms, or zucchini wedges may be added to skewers if desired.
