Chocolate Chocolate Chip Muffins From Disney's Andi Mack
First of all, if you haven't seen the show Andi Mack, you should check it out! It's incredible, has great representation, and is one of the best shows Disney has to offer. Chocolate chocolate chip muffins are Cyrus Goodman's favorite, so I made them, and they turned out great! Hopefully he won't have to cut the line to grab one of these! Let's get started!
Supplies
Ingredients
For this recipe, you will need:
3/4 cup sugar
3/4 cup chocolate chips (I used semisweet)
1/4 cup + 3 tablespoons cocoa (good quality)
1 teaspoon baking soda
3/4 teaspoon baking powder
pinch salt
1 egg
3/4 cup Greek yogurt
1/4 cup + 1 tablespoon milk
1 teaspoon vanilla
1/4 cup coffee
1/2 cup vegetable oil
2 cups flour (all purpose)
Dry Ingredients
Before mixing the ingredients together, preheat the oven to 400 degrees Fahrenheit and set out cupcake liners in a muffin tin. You could also just grease and flour the containers.
In a large bowl, whisk together the flour, sugar, chocolate chips, cocoa powder, baking soda, baking powder, and salt until combined.
Wet Ingredients
In a medium bowl whisk together the egg, yogurt, milk, vanilla, coffee and oil until combined. Make sure that this bowl is smaller than the one with the dry ingredients.
Mixing It All Together
Pour the wet ingredients into the dry, and mix together with a spatula until the batter comes together. Make sure that there are no clumps of flour in the mixture.
Scooping and Baking
Place the liners into the muffin tray. You could also just grease and flour the muffin tin if you prefer not to use paper liners. Evenly distribute the batter between the tins (the recipe makes 24). Make sure not to fill them all the way to the top, since they will rise in the oven.
Baking
Bake the muffins for 5 minutes at 400 degrees Fahrenheit for 5 minutes, and then lower the heat to 350 degrees and continue to bake for 15 minutes, or until a toothpick comes out clean.
Let the muffins cool completely before serving and enjoying (I know Cyrus would love these!)
