Instant Boondi Raita

Instant delicious and cool recipe for summers :)

Ingredients

Boondi: 1/2 cup

Yogurt: 1.5 cups

Water: 1/2 cup or as desired

Salt to taste

Sugar: 1 tsp

Red Chilly Powder: 1/2 tsp

Roasted Cumin Powder: 1/2 tsp

Chaat Masala: 1/4 tsp

Black Pepper: 1/4 tsp

Mint Leaves Chopped: 1 tsp

Fresh Coriander: 2 tsp

Pomegranate Seeds: 2 tsp

Whisk the yogurt in a bowl with the water and keep mixing it. Don't add too much of water you can adjust the water over here, how much ever thick or thin you want.

Add Spices

Now add the salt, sugar and all the dry spices like red chilly powder, roasted cumin powder, some chat masala, black pepper, mint leaves, coriander leaves and stir well, mix everything and keep it aside.

Soak

Soak the boondis in some warm water and let it stand for 10-15 mins. After that drain the access water and lightly press the boondis with the help of your hand and squeeze the access water from it. Don't do hardly and mash it. Once the access water is removed put it directly in the yogurt mixture. Keep doing this until all the boondis are used up. Now stir well and you can put it any bowl or container in which you want to plate up.

Now garnish it with some red chilly powder, roasted cumin powder and some fresh coriander on top. You can serve this cold as well as at room temperature and you can adjust the spices as per your taste. Now top it up with some Pomegranate Seeds on the sides but this is perfectly optional but i personally like the crunch & the sweetness of it in every bite.
