Hup Tul Woo (Chinese Walnut Dessert)
Lol ok so every time my mom goes to the farmer's market she buys a LOT of food (it's a good thing trust me). I was thinking of making this dessert with sesame, but when i saw that 100+ pound bag of walnuts... ¯\_(ツ)_/¯¯\_(ツ)_/¯¯\_(ツ)_/¯
This is an Asian dessert which is kind of like a sweet and smooth porridge... it's viscosity is a bit thinner than that of melted chocolate. Anywayyyyyssss, if you like Chinese desserts, you should definitely give this a try!
Just a heads up - this is my second attempt at this sort of dessert so uh it's probably not five star material xD but I encourage you to check out other recipes of the same dessert if this one doesn't work out for you!
Ingredients
- 2 cups raw walnuts (shelled)
- 4 cups water
- 2 cups milk
- 3/4 cup sugar
- 1/4 cup white rice
You may replace the 2 cups of milk with water if desired. Adding milk gives the soup a smoother texture and makes it a bit richer (if you want to drink more than one bowl then you might wanna replace the milk with water).
Also, if you prefer a thinner and more soup-like result, reduce the amount of rice to about three tablespoons.
No Rice No Life
Cover the rice in water and let it rest overnight. Alternative: Soak rice in boiling water for 1-3 hours. Drain the water and proceed to the next step.
The rice is what gives the soup its thick consistency. Soaking it in water softens the rice and makes it easier mix/blend with the other ingredients. Oh, and don't make this with cooked rice lol.
Roast the Walnuts
This step is v important if you want this dessert to taste good (walnuts are the main component!). You don't want it to end up tasting raw walnutty~
Toast/bake your walnuts at 350°F for 12-15 minutes or until golden brown - when you start smelling that nice roasted walnut fragrance, you know it's done.
Walnut Puree~~~
Don't make the mistake of adding too much water while blending -- the first time I tried to make it there were tiny lumps of rice that didn't grind down enough. I used a blender, but you can use a more high quality food processor ^^;
Take about half of your walnuts + rice and put them in a blender and cover it with water (about 3/4 cup). Blend until you get a thick puree (add more water if needed). Make sure the rice and walnuts are all broken down!
Smoothing Out the Mixture
After making the puree, add another cup of water and blend until smooth. Try to minimize the amount of lumps and bumps! Repeat step four and do the same with the other half of the walnuts and rice. Transfer the mixture to a large saucepan and add the rest of the water.
Keep Stirring!
Cook the mixture over medium heat, continuously stirring (this prevents the bottom from burning). Add sugar once the mixture has thickened and is starting to heat up (about 3-5 minutes). If it gets too thick, add more water :)
If not using milk, bring the mixture to a boil and you're done! Serve it hot as a snack or dessert~
Adding the Milk (skip If Not Using Milk)
Once the mixture is close to a boil, stir in the two cups of milk. Bring to a boil or stir until hot. And yay we're done!!!
Just a side note: There is a slight chance the milk may cover a bit of the walnuts' fragrance (I'm not entirely sure on this yet, but the soup did seem a little less walnutty compared to last time. However, it really depends on the quality of your roasted walnuts)
Serving
Serve this dessert hot! It tastes great cold or warm, but it tastes best right after it's finished. Scoop out a bowl, let it cool for a minute or two, and enjoy!
This probably isn't the best recipe, but it was definitely fun and easy to make! And it's great with tang yuan too (mochi-like sweet rice balls). The important thing was that my baby bro loved it and that's all that matters (he rejects everything I cook so this is a first oml). You can also make this type of dessert with sesame seeds or peanuts!
