Hungarian Paprika Chicken

This recipe is very simple and always very popular with my friends. Can be served on rice or fresh pasta.
you'll need:

diced chicken
a red cupsicum pepper (red pepper)
half an onion
clove of garlic
one fresh tomato (optional: gives it a much "fresher" taste than the canned tomatoes alone)
a can of diced tomato
one chilli pepper (optional: but recommended, it'll be bland without it)
paprika powder
small tub of sour cream
cooking oil
rice
salt and pepper to taste

red wine (for the chef)

Start the rice cooker, this meal will be done by the time the rice is cooked.
Dice the cupsicum, the onion, the clove of garlic and tomato.
Place in a food processor.
Run it for about 20 seconds so that it's finely chopped.

Dice the chicken.
Cook in a pot with a bit of oil.
When cooked add paprika powder until the chicken pieces are coated.

Add the finely chopped vegetables and the can of diced tomato.
Add salt and pepper.
Let it simmer on medium heat for about 5 minutes.

Add a couple of spoonfuls of the sour cream and stir so it turns a nice orange colour.
Let it simmer a couple of minutes and serve on rice or pasta.
