Hummus Recipe
Hummus is a delicious Middle Eastern chickpea spread. It is very healthy, and easy to make at home. Serve it warm or cold, for breakfast, lunch or dinner with homemade Pita bread.
Ingredients:
Chickpeas (garbanzo beans) - 500 grams
Tahini (Sesame paste) - 120 grams
Lemon - 1
Garlic - 2 cloves
Salt - 1-2 teaspoons

Soak ½ kg of chickpea in 1 ½ liters of water for 12 hours. You could add a teaspoon of baking soda to the chickpeas; it will make the chickpeas cook faster.
After 12 hours, rinse the chickpeas under running water. Transfer to a pot and cover with 2 liters of cold water.
Cover with a lid, bring to boil and cook over low heat for 2.5-3 hours, until very soft. Strain the chickpeas and save the cooking liquid.
Transfer the chickpeas to the blender, add 2 cloves of garlic, 2 teaspoons of salt, the juice of 1 lemon, 120 grams of tahini (sesame paste) and blend. Add about ½ liter of the preserved cooking liquid into the hummus, blend until creamy and smooth.
To serve hummus, spread some hummus on a plate in a circular motion, creating a higher edge. Add some tahini sauce in the middle. You can find a tahini sauce recipe on our website in the sauces and dressings section.
Garnish with a few chickpeas, a teaspoon of toasted pine nuts, sprinkle some paprika and drizzle with 2 teaspoons of olive oil. Garnish with some chopped parsley.
