How to make Huevos Rancheros (Ranchers Eggs) - Stop Motion Cookery

Huevos Rancheros, translates as Ranchers eggs it is a traditional dish served as a large brunch like item on Mexican farms. It is incredibly simple consisting of a fried maize tortillas, Refried eggs, Chorizo, a spicy tomato sauce and eggs, variations of this often include avocado or guacamole. I would recommend this if you feel like something slightly different for breakfast on a special occasions. Despite this dishes simplicity it can look absolutely amazing and taste even better.

Ingredients:
6 Cloves of Garlic

2 Red Onions

1 Avocado

1 tin of chopped tomatoes

1 Tin of Refried Beans

16 Slices of Chorizo

4 tortillas

4 Eggs

1 Bunch of coriander

to season. Salt Pepper Paprika

Like always its best to prep everything first, its a lot quicker and cleaner as you wont be rushing later.

Picture. 1 Finely chop your Garlic to almost Puree consistency.

Picture. 2 Finley dice your red onions, you can put them in the same container as the garlic as you will fry them at the same time.

Picture. 3 Peal and de-stone your avocado, then roughly chop it.

Picture. 4 Finely chop your pepper (i show you how to do this in the video)

Picture. 5-6 open up your tins

Picture. 7 Chop the coriander roughly ( if you chop it too fine it doesn't look as good and loses flavour)

Picture. 8 Get your Tortillas out there packet.

Its always important to get your sauces on first when cooking these will always take the longest and can be kept warm easier then other items if you start to run over.

Picture. 1 In a large hot pan add oil, then wait for it to begin to smoke.

Picture. 2 Once smoking add the onions and garlic, wait for them to caramelise slightly.

Picture. 3 Season well.

Picture. 4 Once caramelised transfer to a smaller saucepan.

Picture. 5-6 Add the tomatoes in to the garlic's and bring to the simmer. simmer for around 10-20 minutes and it will be ready to add to your eggs.

Picture. 7 In to another dish add your refried beans and allow to warm.

Set the pan aside after use it will be useful for the tortillas and Chorizo.

Picture.1 In the same pan add more oil and allow to smoke again.

Picture.2 Once smoking add tortillas and turn the heat down. they should need about 1 minute on each side.

Picture.3 Once the Tortillas have been fried add the Chorizo and gently fry it.

Picture.4 I wanted my eggs to be infused with the flavours of the Chorizo, if you don't want to cook the eggs in the Chorizos oil the swap this step around with step 3.

Picture.5 it is important to have enough oil in the pan to almost cover it the eggs and have it smoking hot. once you have dropped the egg in the pan, turn the heat down and tilt the pan so that the oil covers the egg. allow to cook until the whites have set. then season well.

Picture 1. Use a clean Large plate.

Picture 2. First the Tortilla.

Picture 3. Then a layer of the Refried beans.

Picture 4. Next the Egg.

Picture 5. Layer the tomato sauce on top.

Picture 6. Now the Chorizo.

Picture 7-8. Add the Peppers, avocado, and the Coriander.

Finally gently garnish with pepper salt and paprika.
