How to Make Dum Aloo
You come home from a long day at work, and you smell the wonderful meal being prepared. As the meal gets closer to being done, the smell gets stronger. As you sit, waiting to be served, your mouth starts to salivate. After what seems like forever, your food has arrived. This is what it feels like to me when I eat Dum Aloo. Dum Aloo is a traditional Indian dish. It originated from Kashmir. There are multiple ways to prepare this dish. The uniqueness in this way is the fennel seeds. That's where most of the flavor comes from.
Getting Your Ingredients
You will need:
(you might not be able to find some of these ingredients at your local grocery store)
1 tablespoon coriander powder
1 teaspoon ginger powder
1 tablespoon of fennel powder
1/2 tablespoon cumin seeds
1/2 tablespoon garam masala
1/2 tablespoon turmeric
1/2 tablespoon salt
1/2 tablespoon garlic paste
1/4 teaspoon chili powder
yogurt
baby potatoes 2-3 grams
coriander leaves (optional)
Making Dum Aloo
Once you have the baby potatoes, you will have to boil them and then skin them. Now you get a pan and add one tablespoon cooking oil to it. First, start by adding ½ tablespoon garam masala. Once it starts to sputter slightly, add ½ tablespoon cumin seeds. While the cumin seeds cook, get a small bowl and fill it up ¾ of the way with water, then and add one tablespoon of coriander powder, one tablespoon of fennel powder, one teaspoon of ginger powder, and a quarter teaspoon of chili powder. Mix up all the powders that you have added to your bowl of water. Now that the cumin seeds have been cooked, add ½ tablespoon garlic paste (most restaurants will not add garlic, but my family does as a tradition) and ½ tablespoon turmeric. Once you have mixed everything that has been cooking on the pan add the mixture we made earlier and mix. After it has been well cooked, add some yogurt and slightly less than ½ tablespoon of salt, and start mixing it. Once it has mixed, add the potatoes and some water. If you like coriander leaves, then you can add them right about now. Now let the food mix and simmer for about 20-25 minutes and then your Aloo Dum is ready to be served.
