How to Fry Up Crispy Egg Noodle Chips

Fried Egg Noodles are a fun departure from traditional chips and crackers. They're fantastic for Nachos, great for dipping and they're delicious, too!

The texture and crunch is very similar to Pita Chips, but these fried Egg Noodle chips are a little lighter.

You'll need:
  • Large, Flat Egg Noodles
  • Oil for frying
  • Salt to taste
You'll also need metal tongs.

Boil the egg noodles in salted water until soft. Drain and rinse immediately with cold water so they don't stick together.

Lay the egg noodle strips on paper towels to dry.

Heat 1-2 inches of oil in a pan over high heat. When the top of the oil starts to shiver, it should be ready. Be sure to double check your noodles and use a paper towel to dab away any extra moisture.

Test a single noodle to make sure the oil is hot enough. At the right temperature, the noodle will drop to the bottom of the oil for 1-2 seconds, then pop to the top and dance like a good little frying egg noodle should! ;-)  

Work in small batches of 6 or 7 strips at a time.

When one side looks golden, turn with your tongs and fry until the bubbling almost stops. All stovetops are different, so you might need to turn the heat down a little. I kept my gas burner on high the entire cooking time and it worked out great.

The final picture shows 3 fried Noodles. The noodle on the left is under-cooked and the noodle on the right is over-cooked. The noodle in the center is just right!
