How to Cook Collard Greens Just Like They Make Down South

This is a side dish that is very popular in the south. If you grew up in the south then you have eaten some collard greens. This is how they make southern collard greens. You can make this dish with any meats to give your greens some flavor. I know a lot of people who will use smoked turkey wings instead of ham shanks or ham hocks. How to clean your collard greens.

1. Separate your greens. Cut off them stems

2. Wash your greens to make sure you get rid of any grit, sand or dirt.

3. Tear the green away from the stem and put it aside in a stack

4. cut the stacks into strips and then you have collard greens ready to be cooked.

What You Need to Start Cooking Collard Greens

This is what you need to cook your greens.

4 bushels of collard greens

1 onion chopped

4 cloves of garlic

4 cubes chicken bullion

2 ham shanks

1/2 teaspoon of season salt

1/2 teaspoon spoon of garlic salt

1/2 teaspoon of black pepper

2 dashes of hot sauce

1 dash of pepper flakes

Chop up your onion and set it aside. Getting a small chopper saves a lot of time. Do the same with your garlic. Then in a pot add in the bullion cubes, the chopped onion and garlic that you minced. Cover you pan with water just enough to cover the ham shanks, add in the seasonings and heat on low to medium heat.

After it has come to a boil. Take out the ham shanks and separate the meat. Add the meat back into the pot and start adding your collard greens in a little at t time and let them cook down. Continue this until all the greens are cooked down. When green are tender then they are ready to eat. Careful not to cook them to long or they can get mushy. It is up to you want to you to use for seasonings. We at digital home cooking serve our greens in a bowl and add a dash of hot sauce.
