This is a side dish that is very popular in the south. If you grew up in the south then you have eaten some collard greens. This is how they make southern collard greens. You can make this dish with any meats to give your greens some flavor. I know a lot of people who will use smoked turkey wings instead of ham shanks or ham hocks. 1. Separate your greens. Cut off them stems
2. Wash your greens to make sure you get rid of any grit, sand or dirt.

What You Need to Start Cooking Collard Greens
This is what you need to cook your greens.
4 bushels of collard greens
1 onion chopped
4 cloves of garlic
4 cubes chicken bullion
2 ham shanks

1/2 teaspoon of black pepper
2 dashes of hot sauce
1 dash of pepper flakes
Chop up your onion and set it aside. Getting a small chopper saves a lot of time. Do the same with your garlic. Then in a pot add in the bullion cubes, the chopped onion and garlic that you minced. Cover you pan with water just enough to cover the ham shanks, add in the seasonings and heat on low to medium heat.

Continue this until all the greens are cooked down. When green are tender then they are ready to eat. Careful not to cook them to long or they can get mushy.
